Ever feel like you're in a different country even though you're barely twenty minutes out of the city? Like going to the market in Footscray, setting foot in Bismi transports you to the friendly, we-never-close (well, almost never - Bismi opens till midnight 7 days a week) mamak* stores of Malaysia and Singapore. Here, the roti (flat breads) are freshly cooked on the griddle so they are always served up crisp around the edges and warm. When you're stuffed to the gills with the roti pratha and lamb briyani - the latter which is the house specialty, by the way - the roti tissue (self-explanatory?) is just light enough to sweeten the palate without causing too much discomfort. This kind of roti is more like a crepe than bread, created on a round, hot griddle and rolled out into a crisp, paper-thin cone. Sweet, sticky condensed milk is then liberally dribbled onto the top, and lazily runs down the sides. leaving the surface of the cone glistening deliciously. Tear it apart with your hands in the traditional Indian way, then eat with gusto - it would be impolite to do it any other way!
*"Mamak" is the word that describes persons of Indian descent, that have settled in Malaysia and Singapore. | ||
