How does a white chocolate parfait with raspberry jelly and lemon foam sound to you? Not bad? Well, it sure as hell tastes better! This delightful creation by the very time-conscious chefs at Taxi is a perfect mixture of sweet and tangy - the snow white parfait is topped with a bed of crushed almonds, tails of raspberry agar and a whipped curl of lemon foam. Eat it off your black dessert plate (the colour of your plate is chosen for maximum contrast) and moan (discreetly) as the light but creamy parfait melts into the berry and citrus tang. And when you're done, knock down the accompanying shot - it's pure strawberry juice - which will leave your sweet-and-sour tastebuds tingling in delight.
